25-year-old Mollar owns thriving bistro in Karakosh, Iraq

The scent of Lahm Bi Ajeen—spiced meat and vegetables spread over soft dough—and freshly baked pizza draws locals and visitors alike to a small bistro on a lively street. Inside, 25-year-old Mollar works with steady hands, rolling out dough with care, topping it generously, and sliding it into a glowing oven. With the support of Caritas Czech Republic, Mollar was able to open his own bistro in Karakosh, Iraq.

Mollar is able to do what he loves with his bistro 

Karakosh, Iraq’s largest Christian city, carries deep wounds from years of war and displacement. Once a thriving hub, the city was devastated by conflict, forcing many families to flee. Slowly, some of its residents are returning, rebuilding homes and businesses. Mollar’s bistro is one such story of renewal. 

“This job is my favourite thing; I have been working since 2005, and I love being able to communicate with people and to coordinate with them. It’s hard work, but seeing people enjoy my food and feeling the community’s support makes it all worth it,” he says with a smile.

With support from Caritas Czech Republic, Mollar received training in business management. A grant allowed him to purchase equipment, including an oven, which became the foundation for his bistro. Today, he employs four staff members, including his brother and two friends from the area. 

Bringing tradition to the table 

Mollar’s menu pays homage to his heritage. Lahm Bi Ajeen, a traditional Iraqi dish, is the star, alongside pizzas that cater to a modern audience. “Through the training, I learnt how to communicate with customers, market my dishes, and manage deliveries,” Mollar explains.

Every detail in his bistro reflects his passion. Mollar takes pride in using fresh ingredients, ensuring each dish is served with care. As customers savour their meals, Mollar moves between tables, greeting familiar faces and welcoming newcomers. 

While the bistro is thriving, Mollar’s ambitions extend far beyond its current walls. “One day, I hope to open a larger restaurant or start a delivery service,” he shares. “I want to create more jobs and make this community stronger.” 

Despite the challenges of life in Karakosh, Mollar remains optimistic. “It’s not just about the food, it’s about building something that lasts—a place for myself and for Karakosh,” he states with determination.

Supporting local entrepreneurs in post-conflict Iraq 

Caritas Czech Republic has been working in Iraq since 2015, helping individuals rebuild their livelihoods and communities in the wake of conflict. Programmes like the one that supported Mollar are vital in regions like Ninewa, where economic opportunities remain scarce. 

Thanks to donors such as the Italian Agency for Development Cooperation (AICS)  in partnership with CFP, these initiatives provide more than just financial support—they offer training, tools, and the self-sufficiency to rebuild. 

Mollar’s bistro is more than just a business; it is a symbol of resilience. With each pizza and Lahm Bi Ajeen he serves, he isn’t just feeding his customers—he is nurturing a city and culture determined to heal.
